Keto Blueberry & Coconut Oat Bars

​Serves 9 - 16 people

This easy-to-make blueberry oat bar recipe gives the perfect amount of wholesome goodness with a punch of blueberry, a perfect blend of sweet and nutritious, you could say!

 

Each bar is packed with plump blueberries, hearty oats, coconut cream, peanut butter, and topped with a delightful crunch of granola and coconut.

 

These bars are not only a delicious snack but also a great source of energy for your busy day. Enjoy them on the go or as a treat at home!

Ingredients:

 

3 cups blueberries

1 cup water

½ coconut cream

1 cup all-natural peanut butter

1 cup sugar-free maple syrup

6 tablespoons coconut oil

3 cups rolled oats

3 cups oat flour

3 tablespoons cornstarch

1 cup of Granola​​​​​​

1 cup of shredded or sliced coconut

I use a 10" x 15" pan​

I top mine with Shredded Coconut and Granola! But feel free to substitute the coconut for Chia seeds or one of your other favourite toppings!

My recipes are designed to incorporate your likes and dislikes. This gives you the options to add in or take out things you like or don't like!

  • Line a 10 x 15" pan with parchment paper or grease with cooking spray.

  • In a medium pot over medium heat, add in your blueberries, water and simmer until cooked.

  • Gently add cornstarch to blueberries, stir until thick, then set aside to cool.

  • In a large bowl, add peanut butter, maple syrup, coconut oil, oats, oat flour, and coconut cream, and mix until combined.

  • Transfer oat mixture to the pan and spread out evenly.

  • Add cooled blueberry mixture on top and spread evenly.

  • Sprinkle coconut and granola mix to your preferred amount.

  • Chill for 2 hours or overnight.
