
Cloud Bread

Our Cloud Bread is a light and fluffy alternative to traditional bread, perfect for those seeking a low-carb or gluten-free option.
Made primarily from eggs and mascarpone or cream cheese, it offers a unique texture that's airy and delicious.
Ideal for sandwiches, toasts, or simply enjoyed on its own, cloud bread is a delightful way to satisfy cravings without the guilt.

Ingredients:
3 large eggs - room temperature
85g mascarpone - or cream cheese; softened
1/8 tsp Cream of tartar
1/8 tsp Sea salt

While folding the egg whites, be careful not to break down the air bubbles in the whites.

Cloud bread sticks to pans easily, so I always line my baking tray with parchment paper. A silicone mat can work too, but not as well as parchment paper.
Method:

Preheat oven 150°C

Line a baking tray with parchment paper and grease lightly.

Separate the egg yolk from the egg whites and set them aside.

In a large bowl, using a hand mixer or kitchen master, beat the egg whites and cream of tartar until stiff peaks form - make sure they are stiff peaks, not soft peaks.

In a second large bowl, use the mixer to beat the mascarpone, egg yolks, and sea salt until smooth.

Carefully and gradually fold the egg whites into the mascarpone mixture with a spatula.

Scoop the mixture into 6 circular discs onto the parchment paper.

Bake for 25-35 minutes, until golden.

Let the cloud bread cool on the baking sheet, then transfer to a cooling rack to cool completely.
